The holiday season is right around the corner. Here is something to add to your recipe list.
Ingredients: 1 + 1/4 cup creamy peanut butter, divided 3/4 cup allulose sweetener* 1/2 tsp baking soda 1 large egg 9 Lily’s Sweets dark peanut butter cups 1/2 cup Lily’s Sweets milk chocolate chips
*or another sugar-free sweetener of choice, but allulose is recommended for optimal texture, flavor, and browning.
Instructions: Preheat the oven to 350 and line an 8x8-inch square baking pan with parchment paper.
Mix 1 cup of peanut butter, sweetener, and baking soda in a large bowl. Add egg and stir until combined. Spread evenly into the lined baking pan, using damp fingers to spread if the batter is too thick.
Bake for 15-18 minutes, until golden brown. Immediately after removing from the oven, press peanut butter cups into the cookie bars' surface so that the top of the peanut butter cups is level with the top of the bars. Allow cooling completely.
Combine the remaining 1/4 cup peanut butter and the chocolate chips in a microwave-safe bowl, and microwave for 30-60 seconds until soft enough to stir. Stir together until smooth. Pour mixture over the cooled bars and spread evenly.
Allow cooling until the topping sets up. Feel free to refrigerate to speed up this process.
Drizzle with extra peanut butter if desired. Slice, and enjoy!
